Quick & Light Spinach Quiche
A light spinach quiche with Greek yogurt, feta and cottage cheese — nourishing, quick, and kid-friendly too.

Ingredients
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 2 packages baby spinach, rinsed, or 1/2 package frozen spinach, thawed and squeezed dry
- 1 small container Greek yogurt (about 150 g)
- 3 tbsp crumbled feta
- 1/2 container cottage cheese (about 125 g)
- 1/2 cup self-rising flour
- Salt and black pepper, to taste
- A little olive oil for frying
Instructions

Heat a pan with a little olive oil and sauté the onion until golden.

Add the spinach and cook until half done — it will wilt and release some liquid.

Add the crushed garlic and stir for another minute.

Remove from the heat. While the mixture is still warm, add the yogurt, cottage cheese, feta and flour, season with salt and pepper, and mix until combined.

Grease a medium pan (24 cm round or a small rectangular one), pour in the batter and smooth the top.

Bake in an oven preheated to 180°C for 35–40 minutes, until the quiche is set and lightly golden.

Cool slightly before serving.
