Easy Banana Bread
An easy banana bread recipe that puts very ripe bananas to good use — instead of tossing them in the bin.

Ingredients
- 1 1/4 cups all-purpose flour
- 1 packet baking soda
- 1/4 cup brown sugar
- 1/4 cup oil
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 4 very ripe bananas
- 100 g pecans or other nuts

Mix the flour, baking soda, sugar and spices.

In a separate bowl, mash the bananas, add the eggs and oil and mix into a smooth batter.

Combine the dry and wet ingredients until just mixed, then fold in the nuts.

Pour the batter into a loaf pan.

Slice a reserved banana in half lengthwise and lay it on top of the batter.

Bake at 180°C for about 25 minutes. Test like a cake — a toothpick in the center that comes out dry means it's time to dig in.
