Yellow Curry Chicken
Chicken strips in a creamy yellow curry sauce with peanut butter and honey — comforting Asian-style dinner served over rice.

Ingredients
- 500 g chicken breast, cut into strips
- 2 tbsp yellow curry paste
- 3 tbsp natural peanut butter
- 2 tbsp honey
- 1 tsp salt
- 1 container yogurt (200 g)
- 1/2 cup water
- 1 small onion, chopped

Heat a grill pan or regular pan with a little oil. Sear the chicken strips on both sides until cooked through, then transfer to a separate bowl.

In the same pan or a small sauté pot, fry the onion until golden and lightly browned.

In a small bowl, whisk the curry paste, peanut butter, honey, salt, yogurt and water until smooth.

Add the sauce to the pan with the onion and stir for a minute or two until it comes together and starts to thicken.

Return the chicken to the pan, stir well, and simmer over low heat for about 10 minutes until the sauce coats the chicken and turns rich and creamy.

Serve hot over white rice. Garnish with chopped cilantro or roasted peanuts if you like.
