Mexican Dim Sum
Homemade dim sum dumplings with a spicy beef and pine nut filling or a vegetarian corn filling, served with a winning Asian dipping sauce. An impressive dish that surprises in every bite.

Ingredients
For the dough
- 2 cups flour
- 3/4 cup boiling water
For the meat filling
- 1 onion
- 2 garlic cloves
- 500 g ground beef
- 50 g pine nuts
- 1 tomato
- Cilantro or parsley
- 1 green or red hot pepper
- 1 tsp salt
- 1/2 tsp yellow curry powder
- 1/2 tsp sweet paprika
For the vegetarian filling
- 1 can of sweet corn or 300 g frozen corn
- 1 chopped onion
- 2 garlic cloves
- 1 tomato
- 2 tbsp cornstarch
- 1/4 cup milk or cream
- 1/2 tsp salt
For the sauce
- 5 tbsp fish sauce
- 2 tbsp teriyaki sauce
- 1 tbsp mirin or rice vinegar
- 1/4 tsp chili
- 1/4 tsp sesame oil
- 1 minced garlic clove

Meat filling: fry the onion, garlic and hot pepper until golden.

Add the ground beef, pine nuts and spices and fry until the meat browns.

Remove from the heat and stir in chopped tomatoes and cilantro or parsley.

Vegetarian filling: fry the onion and garlic until golden.

In a separate bowl dissolve the cornstarch in the milk and add to the pan.

Add the corn and tomato, fry for about 5 more minutes and remove from the heat.

Dough: mix the boiling water with the flour and knead into a smooth dough.

Roll the dough out to 2 mm thickness - keep it as thin as possible, otherwise the dumplings will be very thick, especially at the edges.

Cut out 2.5 cm circles and place a teaspoon of filling on each.

Wet the edges of each circle with a little water using your finger, fold in half and seal.

Traditional steaming: set a wide pan half-filled with water on the stove, place a dim sum steamer on top and steam for about 10 minutes for a dreamy dough texture. A wok works too.

Alternatively, fry in a little oil for about a minute, add half a cup of water and cover - the dough lightly steams after frying. Each method gives a different taste and texture, both worth trying.

Sauce: mix all the ingredients and serve alongside the dim sum.
