Spinach Bourekas
Puff pastry pockets filled with spinach, mozzarella and Parmesan — homemade bourekas that disappear in minutes.

Ingredients
- Puff pastry
- 1 large white onion, chopped
- 1 tbsp oil
- 1/2 package fresh spinach or 6 frozen spinach cubes
- 1/4 cup buttermilk
- 6 mozzarella balls, chopped
- 2 tbsp cornstarch
- 3 tbsp Parmesan
- Pinch of coarse salt
- Pinch of dried chili
Instructions

Sauté the onion with a tablespoon of oil in a pan until golden.

Add the chopped spinach and stir.

Add the buttermilk, cheeses and seasoning and keep stirring.

Thicken the mixture with cornstarch, adjust the seasoning and remove from the heat.

Cut the pastry into circles and fill each with a teaspoon of the spinach mixture (leave a 1.5 cm border).

Fold in half and seal well with the back of a fork.

Bake at 250°C for 15–20 minutes, until the bourekas are golden.

Serve with crushed tomatoes, mayonnaise, a hard-boiled egg and pickles.
