Gluten-Free, Sugar-Free Banana Almond Cake for Babies

A soft cake made with almond flour and fruit only — no gluten, no added sugar — topped with a mascarpone-yogurt frosting.

Ingredients

For the cake

  • 250 g almond flour
  • 2 very ripe bananas
  • 4 strawberries, mashed
  • 1 date, chopped
  • 3 tbsp applesauce
  • 2 eggs
  • 1 packet baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

For the cream cheese and yogurt frosting

  • 200 g mascarpone
  • 4–6 tbsp plain Greek yogurt
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup

    Preheat the oven to 170°C and line a loaf pan or an 18–20 cm round pan with parchment paper.

    Mash the bananas into a smooth purée. Add the applesauce, strawberries, dates, eggs, vanilla and cinnamon and mix until combined.

    Add the almond flour and baking powder and gently mix into a uniform batter.

    Transfer to the pan and smooth the top. Bake for 30–40 minutes, until a toothpick comes out dry. Cool completely before frosting.

    For the frosting: beat the mascarpone until smooth, then gradually add the Greek yogurt a spoonful at a time until you have a soft, stable cream.

    Add the vanilla and maple syrup and mix gently. Spread an even layer over the cake and decorate with fruit.
